Abstract
The study described below was carried out to understand how the heavy metals present in the environment can end up in the human body trough vegetables meals. It was carried out on products of vegetable origin as they are at the base of the food chain, both for human and animal, and therefore represent the starting point of the trophic chain and the major factor of contamination for all those who eat it. Furthermore, with the advent of new vegetarian and vegan food cultures, humans are even more exposed to ingesting large quantities of heavy metals through vegetables. This study’s objective is to find the most valid and effective NATURAL remedies for reducing concentrations of heavy metals in humans, focusing on the importance of consuming local and seasonal products.
