Abstract
Ethnobotanical studies have been recognized a remarkable importance for the identification of plants which contain substances that modulate the heterodimer T1R2-T1R3 sweet taste receptor. Despite their relatively high prices, linked to that of sucrose, the steviol diterpene glycosides from the leaves of Stevia rebaudiana (Asteraceae) and the cucurbitane triterpene glycosides(mogrosides) from the fruits of Siratia grosvenorii(Cucurbitaceae) are of current great interest for further and more extensive utilization on the market as sweet-tasting non-caloric food additives, due to the growth of obesity and diabetes rates all over the world. In addition, in nature there are proteins that can modify taste, namely thaumatin, monelin and miraculin, which have the potential to replace artificial sweeteners, by acting as natural, good, low calorie sweeteners. All of these proteins have been isolated from plants that grow in tropical rain forests. Aspects related to the interaction between these sweet proteins and human T1R2-T1R3 sweet taste receptor are today discussed.
